Samhain Sugar Cookies With Sunshine Potion Icing
recipe by: The Gut Lab
prep time: 20 minutes | bake time: 9 minutes | icing + decorating time: go nuts!
ingredients: (we encourage you to use organic ingredients when possible!)
cookies:
3/4 - 1 cup organic coconut flour
1/4 cup grass fed butter or ghee (cold)
1/2 cup coconut sugar
1 large pasture raised + organic + grass fed egg
1/2 tsp aluminum free baking soda
1 tsp organic pure vanilla extract
1/4 tsp himalayan salt
1 tbsp arrowroot powder
icing:
1/4 cup coconut oil
1/4 cup cocoa butter
1 tbsp sunshine potion by The Gut Lab
1 tbsp tocos by The Gut Lab
2-3 tbsp raw honey or 3-4 tbsp coconut sugar (sweeten to your taste!)
2 tsp pure vanilla extract
toppings: mini + vegan + refined sugar free chocolate chips, bee pollen lab essential by The Gut Lab, dried berries, unsweetened shredded coconut, chopped nuts (get creative!)
directions:
cookies:
1. preheat oven to 350 degrees
2. combine/cut in butter with all ingredients (except flour)
3. add in flour. once incorportated, form into a large ball of dough and place between 2 pieces of parchment paper
tip: add a little more coconut flour if the dough is too sticky
4. roll out dough until it is 1/4 inch thick + cut out with a pumpkin shaped cutter
5. place cookies on parchment paper lined baking sheet
6. bake for 9 minutes at 350 degree or until lightly golden brown around edges
7. remove from oven + place on a rack to cool while you make your icing!
icing:
1. add coconut oil + cocoa butter to a sauce pan + heat until just melted
2. remove from heat + add all remaining ingredients
3. pour into small metal bowl + place in the freezer for 20-30 minutes
4. remove from freezer + with a hand mixer, blend until thick + creamy
tip: you may need to pop in freezer for another minute and then blend again
5. once cookies have cooled, ice the cookies + decorate till your heart's content!
store in the fridge for maximum freshness up to 10 days
